Mmmmm... Buffalo Wings

Live Driver Inigo sent us in the E&C Buffallo Wings Recipe. If you're not familiar with them, they're delicious and moreish, with just the right ammount of spicy kick. Try them out and let us know how you got on.

Hey guys.

Note: A lot of credit is due to the various contributors to the E&C
wings thread on boards.ie, especially 'Ballyman' for identifying
Franks as the key ingredient.

Ingredients:
36 chicken wing pieces (one wing makes 2 pieces - the "flat" and the "drum")
1 tablespoon vegetable oil
1 tablespoon salt
1 tablespoon cayenne pepper
Mug of flour

Sauce:
1 1/2 tablespoons cider vinegar (or balsamic cider vinegar if you can get it)
1/4 teaspoon cayenne pepper
1/8 teaspoon garlic salt
1/4 teaspoon Worcestershire sauce
1 teaspoon Tabasco sauce
1/4 teaspoon salt
6 tablespoons butter
6 tablespoons Frank’s Original Hot Sauce – Available from most Tescos
and Fallon & Byrne – Don’t buy the pre-mixed buffalo wing sauce!

Dip:
Blue cheese dressing or sour cream

Prep:
1. Preheat oven to 210 Celsius.

2. Cut whole wings into two pieces and remove the wing tip. In a bowl
toss the wings with the oil, and salt. Place into a large plastic
shopping bag, and add the flour and cayenne pepper. Shake to coat
evenly. Remove wings from the bag, shaking off excess flour, and
spread out evenly on an oiled cookie sheet or similar. Bake for about
20 minutes, turn the wings over, and cook another 20 minutes, or until
the wings are cooked through and crispy. Wings can also be deep-fried
if you prefer.

3. While the wings are baking, mix all the ingredients for the sauce
in a pan, and over a very low heat melt them together, stirring
constantly - don't let the butter separate, and then turn off. You can
adjust the amount of butter in the mix to suit your own taste/heat
tolerance - E&C use a LOT of butter.

4. After the wings are cooked, transfer to a large mixing bowl. Pour
the sauce over the hot wings and toss with a spoon or spatula to
completely coat.

5. Serve with dipping sauce, french fries sprinkled with garlic salt
and a beer. And celery if you’re into that sort of thing.

6. Gorge yourself.

(E&C actually deep fry the wings, but the above version is easier to
do at home.)

Let Love In - Nick Cave


Let Love In” is the eighth studio album by Nick Cave and the Bad Seeds, released in April 1994. It contains all of the elements that make Cave and his band great; love, death, the blues, booze and murder, and yet it is also more accessible than some of their other work. Although several masterpieces of gothic imagery abound, this album, for the most part, focuses on love.
The two versions of “Do You Love Me?” star as the bread in this dark musical sandwich, a chilling look at child prostitution and reportedly based on what Cave observed while living in Brazil. The compulsory piano-led love ballad of course also features in the form of “Nobody’s Baby”. “Jangling Jack” is a cheerful tale of death and bar-room brawling. “Lay Me Low” sees Cave musing on his eventual end with his own unique irony and black humour. “Loverman”, with its demonic fury, is perhaps best known by many as one of the stand-out tracks from Metallica’s “Garage Inc.” covers album. The (nearly) title track, “I Let Love In”, paints a bleak picture of the darkness, pain and frustrations that often accompany the most overused word in any song; ‘love’. The album’s highlight is easily the creepily-catchy “Red Right Hand”. Cave’s songs have been sadder on some albums, or have been grubbier in production on others, but on the whole “Let Love In” hasn’t been bettered. Cave is on searing form both lyrically and vocally, and the Bad Seeds have never sounded this electrifying. Flooded with emotions, this album is hard-hitting, powerful and reveals all its charms and nuances after repeated listens. If ever there was a record that will lead you to pursue other releases in an artist’s catalogue, this is the one.
